This is his afternoon snack: a mini soufflee with spinach and feta that Tiffany made for him. I'm pretty sure I wasn't getting any souffles as a kid (and I just may have looked longingly at this one before feeding it to him).
It was just the old Fannie Farmer souffle recipe but I used 3-4 tablespoons of feta instead of the cheddar and added some frozen chopped spinach. I think I'm still underbeating the egg whites, but as long as the chickens next door keep laying I'll have plenty of eggs for experimentation!
Don't forget that you ate 1.5 adult-sized souffles before Jory got any of his!
